Hi My name is Ian and I live now in Cocoa, Fl. I am originally from England. I have been here for nearly three years.
Back in My younger days I brewed both beer and wine. But work and life got in the way, Oh and three boys.
However I am catching the bug again. But this may sound silly but things have certainly changed since I last brewed beer. For instance I used Sodium Metabiasulphate and citric acid as a no rinse sanitizer, but can find very little mention of in the forums. Also the fast chilling of the wort with a chiller was unheard of, either that or my memory is worse than I thought. BTW I am talking of thirty years back.
Anyway here is hoping to some good brews. For my first brew I would love to find a good recipe for good old British Bitter. I only miss a few things from back home and that is certainly one of them.
 
Hello Ian and welcome to the forum. Brewing techniques have definitely changed in the past 30 years, but the good thing is the advancements made in the brewing process will mostly allow for you to be more efficient and help you to brew a more consistent and better beer. Not to mention, the advent of the internet which allows anyone instant access to a wealth of brewing information anytime needed. Cheers!
