Hey all,

My name is Neil, I'm a technical director for the theatre and dance department at Appalachian State University in Boone, NC.

I found this site while looking for information about brewing cider, and it's been a wonderful resource. Within the last year I found out I was gluten intolerant, so I'm hoping to start brewing cider and move on to gluten free brewing once I've got some of the basics down.

Thanks to everyone whose posts I've already scoured for information!
 
I have not posted enough information yet to say your welcome, but these people love sharing their knowledge. Welcome to the forum! I have some cider on tap right now, and I love it! Good luck with all your endeavors in brewing!
 
Howdy from Maryland! I would look into Radical Brewing by Randy Mosher -- it's pretty enlightening and helped me to understand some of the roles other grains could play in the brewhouse.

Of course, the best resource is this site! These people have some serious talent and are very welcoming. Cheers and have fun!
