Hey guys, just started my 1st 1 gallon batch but i feel like i messed up!
My questions in are you supposed to add water do wine when first making it?
When should i put the airlock on my primary fermenter?
Are you supposed to wait a few hours/days to add the yeast?
 
As far as adding water to wine I don't know.

Put the airlock on immediately.

Pitch the yeast when the 'wine' is at a temperature that the yeast can handle. Usually 70 degrees or so.

Lots of people say to put the airlock on the secondary fermenter and others say to wait 24 or 48 hours before putting it on....for now i have a cloth over it.
 
It's my understanding that initially, wine doesn't necessarily have to be under an airlock, merely covered The oxygen transfer is desirable. During active fermentation, the CO2 pushes everything out. Doesn't hurt to be airlocked but not required.

After 1st racking, I think you definitely need to be under airlock.

But definitely check the wine making forum. Look for posts by "Yooper"
 
Also, I think you add top up water after racking to minimize head space. If you need "too much" water,you can add sanitized marbles instead to raise the level. You can also top off with a similar wine or some reserved must.

I'm going off of beer brewing experience. I have none in wine making which is why I pointed you to the wine forum. I may do that in the future though so maybe you can give me some tips. Good luck
