Hi!

I made today app. 10 gal (40l) of wheat beer. Problem is I have only one package of wheat yeast (fermentis 11,5g). Would this be enough? Problem is I nearest brew shop is 2-3 hours away and they don't have post deliveries. I have few other yeast strains at home but I don't think it's a good idea to mix them together. I can't also make a yeast starter because I don't have dry malt extract. Any ideas???

If you have mpre yeast and fermentors, I would split the batch into 2 and use a different yeast for the other. Mabye something clean and add some dryhops and call it an American Wheat?
 
Well, others could weigh in, but Mr Malty only calls for 1.6 11g packs of dry yeast (assuming it is not too old). So if you pitched only the one you wouldn't be TOO far below pitching rate. Plus, since it is a wheat beer, if they throw a few esters I wouldn't think it would be offputting. Again, I'm no expert, but it seems to be ok. What does everyone else think?

and what if I pitch one package now in the batc and one after few days would this cause any trouble?
