Help with new hops!

I'm making a pale ale with 2 row and a mystery grain that will add an earthy flavor. It's nothing illegal or dangerous, just something unique that I'd rather not have posted yet. I am going to over-dry hop for 2-3 weeks with an ounce of centennial to add a bit of grassy flavor. The other hops I have are fuggles, williamette, and glacier. I don't want the beer to be too spicy or bitter. I'd like my grains to shine after a big aroma and then a bit of an earthy finish. I'm not tremendously familiar with these hops so if I could get either some vague recommendations or even a few potential hop schedules, I'd appreciate it!
 
I'm not saying a thing until you tell me what this mystery grain is ;)
