Help with my cacao mead?

Hi guys, hoping that you can help me out with a mead I have going. It's a cocao and vanilla mead that I am making for December 2012 (my end of the world mead). I've been thinking that I would love it to have a kind of cookie-type flavour along with the vanilla and cocao. How would I go about accomplishing this? Would I toast some oatmeal or something? I don't know how relevant this is, but I am using powder rather than cocao nibs.

Just an experiment. This is going to be racked to a secondary on the weekend (or maybe a bit later?). It has been in the primary for almost 2 weeks exactly. Should I leave it a bit more?
