I started a german hefe weizen on 1/16. the og was 1.065. I racked it to a secondary on 1/24 and g was 1.016. I added a 1/4 teaspoon of yeast energizer and nutrient when racking. I realize I shouldn't have done this. The beer darkened and is bubbling the airlock once every few minutes. It doesn't look anything like a hefe weizen anymore. Any suggestions on anything i could possibly do?
 
Leave it alone for another week. Next time don't even bother with the secondary unless you are dry hopping, adding fruit, or doing a lager.
 
1.065 OG seems a bit high for a typical non-dunkel hefe. Mind posting the recipe?

SG was supposed to be 1.060. I added about 12oz honey to it. The recipe is below, it was a kit

6lb wheat dried malt extract
1 bag (amounts not listed) German Light Munich Malt
German Light Wheat Malt
3/4 oz hallertauer bittering pellet hops
1 whirlflock tablet
1 cup priming sugar

12oz clover honey added at end of boil. ( my addition)

used WLP380 yeast and made a 4 cup starter with 6oz of light DME in it.
 
It darkened when you racked?
That's odd-

If it's bubbling, the yeast are going so the gravity should go lower.

Just let is sit a while.
If the color bothers you, use a ceramic mug. :eek:)

And as has been said, you don't need no stinking secondary for a weizen.
 
Could it be that your secondary is a carboy and the primary was a bucket? Just an fyi that beers look darker in the carboy than in the tubing when transfering. Its an optical illusion. There are threads on here that explain it. If that's not it then disregard my post.
 
I have a Hefe in fermenting now. its been a week today I am going to transfer into the keg next Sunday. fermentation looks complete, but I'll take an Hydro reading on Thursday and then again on Sunday. if they are the same I'll rack to keg, if not it shall **** a little bit longer.
