Alright, this is my first brew, it's a "coopers sparkling ale" clone and I may have made a mistake or 2 and I was wondering if someone could help me out with my questions:

1. The recipe called for 2lbs of DME light malt extract and I accidently purchased the syrup and put that in instead. Will this ruin my beer or change it?

2. The recipe called for some cane sugar, so I used the regular granular sugar that's used in most cooking (the guy at the beer store told me it would be fine but in hindsight, I'm not so sure).

3. It's been 24 hours and I have not had any fermentation yet. Is this normal and when do I panic and buy more wyeast?

I hope someone can help me. Maybe I'm a little paranoid because it's my first brew but I really want this beer to turn out!

Thanks,
Paul

hi paul,
Not too sure on the ingredients and their way that it changes it, but I did read in a couple times that regular sugar is ok in most cases. As for the fermentation, I am still on my first batch and my fermentation didn't take place until later the next day, but if all fails and in a couple of days still no fermentation you can always pitch more yeast.
Daum

LME will give you a slightly lower OG than DME and your beer will be a few degrees darker from caramelization. It certainly isn't ruined.

Table sugar is just refined cane sugar, I don't think there's any difference here.

24 hours isn't too long of a lag time. Don't even think about repitching yeast for at least 3 days. Until then, just walk away from the bucket.

Congratulations on the first brew. If you haven't already, take some notes and read them before your next brew, it'll really speed up the learning curve.

1) Your starting gravity will be lower as liquid extract has less fermentables/# then dry but otherwise they are interchangeable except for some subtle differences that shouldn't worry you at this stage of your brewing carreer.

2) Cane sugar is regular granular cooking sugar so your good there.

3) What yeast did you use and how did you prepare it before adding it to your wort?

Thanks for the replies! I guess I will continue to wait it out for a few days and see what happens! I feel a little more at ease. The yeast that I used is Wyeast's 1098 British ale yeast. I read the package and I believe I pitched it correctly.
