Planning on brewing a BIPA this weekend or next weekend and I'm wondering if what I have planned will work. Any and all help will be appreciated.
Looking for something that will be easy drinking
3 gal batch
4.25 gal boil
5# 2row
6oz C 80
4oz midnight wheat (550L)
4oz chocolate malt (350L)
I have 4oz of each Simcoe and Cascade so I'm a bit up in the air on my hop schedule.
.5oz Simcoe 60min
.5oz Cascade 15
.5oz Cascade 10
.5oz Cascade 5
.5oz Simcoe 5
.5oz Cascade 0
.5oz Simcoe 0
Dry hop with 1 oz each for 5-7 days
I plan on mashing @150-152 for 60min and doing a 60 min boil.
Will be using US 05 yeast and looking for 1.049 OG and 1.009 FG so about 5%ABV
I think that's it. Using St.Louis water with Campden tablet.

Looks good to me.

Only tweak in my opinion would be to take out that cascade 10 minute addition. Add it to the 5 or flameout.

Anyone else care to chime in? I'm pretty new to brewing ( 6 months ) so I still like a little advice. The recipe was an award winning grain bill that I put into Brewers friend and had it scale it back from 5gal to 3. Only changes I made were the original used Carafa III and I wanted to use Midnight Wheat and I dropped a pound of 2-row to lower ABV. Original was well over 6% and I wanted something a little more sessional
