Just looking for advice to get a tasty DIPA (not NEIPA but I will dry hop) for me and my hop-loving friends. I do 5.5gal biab batches; here’s what I’ve got so far:
Just because it isn't an NEIPA doesn't mean you can't steal from the NEIPA playbook. Some carapils, wheat malt, or flaked wheat would add a little body and head retention. I personally would move the hop additions later in the boil - to me, anything prior to 15 minutes boil time is just indistinct bitterness. Eureka hops are similar to Simcoe (which you seem to like) but may bring some other flavors to the party. I personally don't like Simcoe all that much anyway, but regardless that is a lot of Simcoe, so there may be a risk of it being one-dimensional. A bit of Citra or Mosaic to cut into the pine/resin may work to accentuate the pine/resin of Simcoe.
For my 2¢: Chinook for bittering, then Simcoe (and/or Eureka, Citra, Mosaic) at 10, flameout, and at 170° for a 30 min whirlpool/hopstand.
Another thing: what is your water profile? Your sulfate and chloride amounts and ratio are going to have a fair impact on how bitter or soft the beer comes across, so if you want a clean, crisp West-Coast bitterness, then upping the sulfate may be in order.
Excellent suggestions. I thought with a lb of crystal I wouldn’t need carapils. I like your hopping ideas and have plenty of mosaic. As for water, I was planning to go with brunwater’s pale ale profile which is quite tipped toward high sulfate IIRC.
