So I had a recipe I wanted to try but when I hit up my LHBS, they were out of citra hops.

I still want to brew an IPA Friday. This is what I have on hand:

Golden Light DME 6#
Caramel 40 .75#
Plenty of corn and table sugar

Got some Chocolate wheat and some Caramunich in the freezer to but I dunno if those would help any.

.5oz Nugget
.5oz Willamette
2oz Centennial
3oz Mosaic
2oz Cascade

And I have some S-05 laying around as well.
 
Chocolate wheat would probably make a pretty interesting hoppy beer but I wouldn't really call it an IPA. I don't think Caramunich will do much for an IPA either. You have some good IPA hops there.

I'd try a "brown IPA" if you have enough chocolate wheat to color it up. I'd bitter with the Mosaic (I know, I know, I just think the other hops would play better with the "brownness"). and go late addition with the Cascade, Centennial and Nugget.

Or you could do a more tropical IPA without the Choc Wheat. Use the Nugget for bittering and go late addition with the Centennial, Mosaic, Cascade combo. I would save the Willamette for something else. S-05 is perfect for either. Good luck with the brew!

Brown IPA sounds interesting. May save that one for later though.

6lb DME
.75 Caramel 40 (Steeped)

.5 Cascade 60
1oz Centennial 10
1oz Mosaic 5
1oz Mosaic flameout

Dry hop 1oz centennial, 1oz mosaic

Maybe an ounce of cascade at dry hop as well? Just for fun?
 
That one looks good, but... I would add .5 cascade at 5 min and FO(in addition to what you already have in the recipe) , and add the Willamette in the mix for dry hop.

MORE HOPS! This is an IPA...

looks good to me. I would ad the nugget in the boil also just for sh$ts and giggles I like hoppy beers

@stpug offered the best grist %'s so far. I would go with that.

0.75# C40 would give this IPA over 10% crystal malt, which in my experience is too much.

For the Hops, best results IMO would be had by using a .33 oz. Nugget bittering charge at rolling boil start. That will give you about 25-30 smooth IBUs as a base, which you can then build upon with the more flavorful & aromatic additions at 10 minutes left in the boil and Whirlpool.

Dryhop for this 1.058/1.011 IPA is fine at 0.50 to 0.60 oz. hops per gallon of wort for 5 days.
