So, this is my fourth batch using an extract kit. This particular kit is the True Brew IPA. Beer is fully fermented, gravity sitting at 1.012.

Last night I racked the beer from the carboy into my bottling bucket (after sanitizing everything). First of all I forgot to add the priming sugar prior to racking. So, I mixed the priming sugar in 1 cup of boiled water. Then I added it and mixed it with a sanitized wand. Here's the problem: after that a family emergency came up and I had to leave. By the time I got home it was too late to bottle. So here I am sitting at work and wondering what I should do. It will have been about 24 hours since adding the priming sugar by the time I get home and get ready to bottle.

What should I do? Will the yeast consume the sugar and mess up the carbonation? Should I add more priming sugar?

Your best best would probably be to let the sugar you already added ferment out. Give it 72 hours or so and then add a new dose of sugar right before you bottle.

Nothing to worry about.

I'd say you missed your window of opportunity to bottle with the sugar you added. Let the beer sit in the bottling bucket for a few days to give the yeasts time to consume the priming sugar. It's not a lot, so it shouldn't take long. Then mix up some more and bottle as usual.

You missed your chance to bottle. If you used dextrose, give it a few days to ferment out then prime again and bottle. When you boil out the priming sugar, make sure you let it cool down to room temperature (very important).

In conclusion: No harm done. You just increased the ABV by just a little bit by not bottling in time. Pretend as though it never happened.

I did use dextrose. Cool, good to know that I didn't mess it up. I'll plan on bottling this Saturday since that will give it few days, and I'll have plenty of time. Thanks for the replies!
