Hi,

I made (2) 1-gallon batches of kombucha using these scobys i bought off amazon.

(Not for continuous brewing per maker of scoby)

I left one scoby with 1 cup of sugar/tea for 5 weeks which i know is too long but it the scoby has multipled after multiple brewings.

I noticed there is 'fizz' at the top of both batches. And the scoby floats to the top which i assume is normal. My concern is it is NOT SUBmerged all the way through. Wouldn't this lead to mold?

When you take a look at my pictures of both batches, can you determine if there is mold or safe to drink?

I also wonder if the alcohol content is too much for auto immune compromised individuals like myself. I have severe psoriasis and candida, bacterial overgrowth with parasites.. My dermatologist told me to avoid alcohol.
