I'm from upstate SC.

I like russian imperial stouts.

In SC you can't really find them after April and before thanksgiving, so I decided to start brewing them.

Starting with extract brewing, going easy at first.

Lots of ways you can go with a RIS. As Cyclman suggested, bourbon/oak is a good variant, and I did one of those a couple years back. Really adds dimension, and an easy addition to do. You can also try vanilla, cocoa bean, chile peppers, etc.
