Hello everyone! I live in Dallas Texas and have been brewing with a full 5 gallon kit I since Christmas. I've had several successful batches that I would mostly qualify as good. Still looking for great. This looks like the perfect place for the right advice to get to Great! Hopefully I can come to help some others along the way as well! Cheers!

I am from Dallas, also! I have not started my first brew yet - but this week, for sure. I am still needing some things to along with the brew before I get started. I went to the HBHQ in Richardson to get all of my stuff! Great store!! I have just a Bock kit - going easy for the first time... It's hot here. Any advice for the temps?

Bock's are typically Lager's. With a lager you will need to ferment in the low 50's and then lager in the mid to upper 30's. Usually a lager is not considered "easy" for a first time brewer. If you don't have the ability to ferment at those lower temps you might want to get yourself an ale instead.. Out of curriosity, what type of yeast is in that bock kit?

I bought the Munton's Bock Kit from the home brew store... :) It comes already with a packet of dry ale yeast... I have talked to the people up at that store and they have assured me that because I am using an ale yeast, that I should be fine with the temps here in Dallas. I do not think I will be raising the temperature above 80 degrees in my home and use a swamp cooler to keep my fermentation cool. :D I also plan to freeze several water bottles to help keep water temps down in the swamp cooler. Idk... I have heard several ends of what to do and what not to do.... :confused:

I guess I shall move forward & at least if this doesn't work the first time, I will have the learning experience so that when the next brew comes along, I will already know how to use it.. ;) If anything, I will have the experience under my belt. :rockin:

92 in the shade. Thank goodness for counterflow wort chiller with a 35 foot prechiller.

I love this small easy going town outside of a huge town.

Whew! It's warm!! But I bet it can't be any worse than Dallas... minus the humidity... :(

It's a nice place. The chemicals some times gets me down there... I remember the air being so heavy and so humid that it felt like a huge enclosed sauna! I used to run through the main strip in Deer Park. Miss that place. Spent many of summers down there. :)

You should be fine since you're using an ale yeast. I also use swamp coolers with great success. Try to keep the water in the swamp cooler between 61-63F and you should be fine. If you have an ice chest that your fermenter fits in, I recommend using it as your swamp cooler. You won't have to add frozen water bottles as often, because the cooler will keep the water cool a lot longer than a Rubbermaid container will..

I actually got an awesome present from my sweet hubby! He decided, after listening to me complain about the hot temperatures here... he bought me a fridge. We have a thermometer in there right now... It's sitting at 50 degrees now... I think for my Bock.. I think it's going to do well. :D I am really excited!! No more have to deal with the swamp chest... Yay!! :rockin:

I will be posting pictures & updates to my first bock brew thread... Hope you heard from you soon to see what you think once I get it up!;)

With that ale yeast 50F will be a bit too cold to ferment. You might have problems with the yeast flocculating on you. You'll want to get a temp controller for the fridge to get the temp in the low to mid 60's for and ale... Or you can save the ale yeast and go buy a lager yeast to use instead, ferment at 50F, and make a true Bock...

Okay.... It's a lager... Not an ale... I think if I use the temps from about 55 to 65 I should be okay... I have a thermometer in the fridge now... I will check it when I get there...

The hubby wants to get started! We are ready!! I think I have made him excited!! Yay!!

Thanks everyone for such a great welcoming. I heavnt checked in for a couple days and this thread really blew up. I too was not born here in Texas either. I got my start as a yankee, just north of Philly. But like the old saying goes, I got here as fast as I could.

Ales seem to do. Best at, or just below room temps. Your yeast packet should tell you the ideal temp for that strain. But generally anything roughly 65 to 75 should work fine.
