Recently started brewing and I'm hoping to contribute to these threads soon. I'm still very new to brewing and want to get much better at it. I started with the northern brewer kit and am in the process of making the caribou slobber brown ale. I did a small batch of a jalepeño saison recently that turned out really good. Really wanting to try my hand at a peppermint mocha stout shortly. I'll keep you posted on how it turns out. Cheers!

Welcome to the forum.

A few tips: Peppermint chocolate stouts can be tricky in that the peppermint flavor tends to fade fast and cocoa can have hidden fats in it, which kills head and is hard to completely get out of solution. I prefer to use peppermint extract (about a teaspoon to five gallons) added to the bottling bucket just prior to bottling and using cacao nibs instead of cocoa powder.

Thanks aiptasia, I will definitely keep that in mind. There's a good chance I will use the extract, I saw that some people have tried peppermint tea leaves as well.

I live near Pensacola.
