I just brewed my first batch if beer which was an all grain honey apricot ale and am getting ready to brew my next batch. I want to make a hefeweizen that will taste similar to pyramids. I'm really new to all of this so the more detailed of a recipe someone can help me out with would be great! I'm also open to other recipes as well. I like my hefeweizen a little banana tasting but not too much. And I don't like the beers with the Clove taste. Any help would be greatly appreciated!
 
The key to balancing the banana/clove is pitch rate and fermentation temp. Given your target, I would under pitch just by a little and ferment at around 70 degrees.
Lower pitch rates will cause the yeast to multiply more, hence produce more banana. Over pitching will give you more clove.
Likewise, high ferm temp gives you more banana, while lower (65 degrees) gives you more clove.

I only brew bavarian style hefe, so I can't help you with yeast selection. However, the yeast selection will help you hit your target.
