Hey, I'm brewing a hefeweizen and realized I dont have Hallertau or other noble German hops. All I have is citra, herkules, magnum, chinook, brewer's gold, and saphir. Which one should I use for bittering at 60? I don't want any late additions or anything like that, but I don't want any off bitter flavors either. Or does it not matter?

Magnum is the best choice but with a hefe you're adding so little bitterness it's not going to be a big difference either way. Chinook would be my last choice because it can be a little harsh with bitterness although at that volume still probably not an issue.

Saphir is a very easy drinking hop for a wheat based beer.
edit: And, it is a German aroma hop, as is Hallertau.

Magnum is my go to for bittering hop. However I use Northern Brewer in my Hefes . Chinook is a substitute. You can't go wrong with Magnum though.
