Hey all!

I've slowly moved from extract on the stove top, to a turkey frier outdoors and now do BIAB all grain.

I've always bought kits, but am ready to venture out to building my own recipes.

I hoping someone here will be kind enough to hold my hand and walk me through what goes into developing a recipe.

I have some hops on hand that I would like to use up. They are as follows:

3 oz Simcoe Pellets
5 oz Centennial Pellets
2.5oz Northern Brewer Whole Leaf (my first harvest from the backyard crop)

I'd like to do a Black IPA with a balanced hop profile (not in your face) somewhere in the 6-7% ABV using what hops I have on hand (assuming they can play well together and make good beer)

Where I need help is the grain bill and the hop schedule and hopefully a little explanation of the thought process behind the selections.

It really goes through the different ingredients and basics of the style. They also give you a few recipes. I would pick one of the grain bills from there.

As far as the hops go, you need a recipe calculator like brewers friend (free) or Beer Smith if you have it. I would use the centennial to bitter since you have more of it. Your backyard crops aren't good for bittering since you don't know the alpha acid percentage so I'd use those in the late boil or dry hop. All of those are good hops for a black IPA though. I'd look at using a mix of about 2-3oz of hops in the late boil (15-0 minutes) and another 2-3oz in the dry hop

I like the idea of rye in the grain bill for something a little different.

I would only use leaf Northern Brewer last 15 minutes or less. When I use whole leaf for bittering I don't like it. Too grassy for my taste
 
I'm drinking a bipa now that has carafa iii and midnight wheat. If I had it to do over again I'd try way less or no carafa because it's too roasty with the hops. The midnight wheat is supposed to be the least roast flavor of the dark malts.
 
And looking at your numbers I'd say there is way too much dark malts in that bill. I'd cut back on the carafa and midnight percentages possibly.

You don't need both Carafa and Midnight Wheat. Pick one or the other. Or split them both in half, 12oz-1lb is plenty

Otherwise pretty good if you're going for a medium level of hoppiness.
