I love this stuff by itself, but have not tried it in a brew. I'm kind of wondering how it would taste, but I want to get a little feedback before I try a brew with it.

Does anyone here have any experience using quinoa in a brew?

You might want to check out the gluten free brewing forum. I know some gluten free brewers have been experimenting with malting different grains, including quiona. Interestingly, there's a pretty big difference in the flavors from using black, white and red quiona.

Far too expensive an ingredient since I'm not gluten free. Curious about it as a brewing grain, but I save it for soup.

Quinoa as a food is delicious- my wife and I make an extremely tasty quinoa salad at least 3 times a month (and I am no vegan- I am an extremely obese dude who loves tasty food). Good stuff. It is (as others have said) gluten free and can be malted for use in GF beers. I have never malted any grain and cannot attest to its flavor in fermented beverages, but it's tasty and can be malted, so go forth and brew, I say!

Just FYI, there are NO beers on the market that use quinoa or quinoa malt in their production. It's up to you! Go for it!
