Making the base for a 10% hard Rootbeer. Started with an OG 1.106. After three weeks have it down to 1.059. Planned to get it down to 1.024. No change in gravity in the last 4 days. Roused every day for last week at 65 deg. USed a 2 liter starter of WLP 99 high gravity yeast. Here is what I am thinking, pitch a vial of wlp 01 in a liter starter into the fermenter to get my FG down. I can accept it being lower than 1.024. I planned on diluting the end product by back sweetening in the keg with a homemade syrup/tea anyways after I kill the yeast off. My question for the group would be, should I oxygenate the wort again before a put the yeast in? My thinking is that the new yeast should use it and it would not produce any off tastes like it would if the beer was oxygenated after fermentation. What sayest thou?
