I'm going to be brewing a hefe in the next few days. I already have everything I need except for the hops. The recipe calls for 1 oz Hallertauer 3 aau for 60 mins.
I have:
1 oz Spalt select 2 aau
1.5 oz Saaz 3.4 aau
.5 oz Styrian golding 3.4 aau
1 oz uk golding 4.9 aau
2 oz perle ? aau
1 oz cascarde 6.4 aau

Would any of these work as a substitute and if so which one and how much?

Probably some combination of the Spalt and Saaz but nothing you have is generally considered a substitute for Hallertauer Mittelfrüh. But, yeah, it's not a real serious issue since the hops are only a supporting player in a hefe anyways.
 
I do alot of Hefeweizens, and when I run out of Hallertau, I use Saaz. I can't tell a difference when used as a bittering hop.
