so first beer with HB was a brett beer that came out great. due to some random issues i didnt touch it for about 4 months, then bottled, drank around 6 months. nice, crisp, white wine type flavor. great.

the past few brews attempts to recreate have been off. i thought it was an infection, or something else. but i now realize it was the hops. it comes out with a flavor that almost reminds me of a saison/phenol in that its a bit spicy and herbal. im not getting the fruitiness that i got the first time.

anyone else experience this? how do i get back to the white wine profile? the only difference between the first brew and the most recent is the time spent aging. so obviously that's the first place to look, but i also wont get that answer for a few months... and i kegged this one. damn.

does the spicy/herbal fade into the white wine/fruit? both times i did only whirlpool additions. dont see any other reason for the difference in the profile.
 
Was your mash temp higher the first time? a lower mash temp might make beer feel dryer and that can remind you of some white wines.
