So, I have had a beer (Arrogant Bastard approximation) in the fermenter for a little over a week. Went to check on it today, and saw... something wrong. Apparently something went wrong with my temp controller, and my temp was at 59°C (138°F). I haven't checked my gravity or anything, but my yeast was healthy and fermentation was going strong until the temps went off.

I'm pretty sure the fermentation was "mostly" done, but what can I expect as far as off-flavors? I've screwed up batches before, but mostly to the tune of bad efficiency or missing SG/FG.

That's far too hot, as I'm sure you realize. That may be hot enough that the yeast have died, so if you're naturally carbonating, you'll need to add some yeast.

If it wasn't finished ferementing, you'll have fusel alcohol, which will taste like hot alcohol and will also give you really bad hangover headaches. If it was finished, I'm not sure what flavors you'll get.

Thanks. I force carbonate, so I don't need the yeast after fermentation. Took a reading this morning, hit my target gravity. I'm going to keg it when I get home and let y'all know how it goes.

Sounds like you dodged the bullet and fermentation was done before it went off the rails. Does it taste Ok at this point?

It tastes green, but I didn't taste anything off. It's carbonating now, but I have my fingers crossed.

I didn't think you could get fermentation that hot. Wow.

It was my temp controller /heating element that got it that hot. The bulk of the primary was about 65.

Drank a full pint tonight. Still green (under two weeks, boil to glass), but it tastes pretty good. I'm not tasting strong of flavors. Good to know that I can get a beer done in a week I guess.

I used Imperial Organic Yeasts A 07 Flagship yeast for reference. Heating element was a Fermwrap, connected to an stc1000 (fridge cut out, and the Fermwrap was free to run wild).
