So I have been wanting to make a Gose for a little while now, but I have a lot of extract lying around and can't convince myself to buy more before using some of what I have (some is bulk LME). I don't have either pils or wheat I don't believe which is what the style calls for. I was wondering if I could use what I have instead plus steep some acidulated malt and add the coriander and salt to the boil if it would have a similar taste or it would be much different. I believe what I have is light lme and a bunch of different types of dme (stocked up on Palmer kits). If anyone has any ideas of what I should use let me know! Thanks guys!
 
I'd steep some acid malt with what you have on hand, then add the coriander and salt near the end of the boil. You can use some lactic acid after fermentation has completed to drop the pH even more. It may be a little more one dimensional than actually kettle souring, but it'll do the trick.
 
Thanks! Yea I'm not looking to have the complexity of a lambic or anything like that, so I think this will work fine. I'm hoping it will come out similar at least to the few goses I've had recently and really enjoyed.
