I just got Northern Brewer's patersbier extract kit in the mail. The hops according to the recipe are 1 oz Hallertau and .5 oz Saaz for bittering and then .5 oz Saaz for aroma/flavor. For the all grain recipe, Hallertau are replaced with Tradition--so I'm assuming one is a good substitute for the other.
What I actually got in the kit, however, is German Spalt. I'm not sure if this was a mistake or not on Northern Brewer's part. So my question is whether I can actually use German Spalt instead of Hallertau or Tradition. Would Spalt really make a difference in the final product, as far a bittering hops go? In terms of alpha acids, they seem relatively similar (within .5%).
My LHBS had Hallertau last time I was there a few weeks ago, so if I need to I could grab a package.
