Who decided that the qualities I very much enjoy are bad or inappropriate, or even stupid?
Yes, I apologize, stupid may have been a bit rash.

And nobody can decide what you enjoy. But when you counter everything that people have been trying to keep out of beer by putting it in, you surely expected some strong counter opinions. If not, my previous statement wasn't as rash as it seemed.
 
Not sure what this entire discussion has to do with Florida? I lived in Texas for 13+ years and go back frequently. I don't bash it, or the people in it, for them having an opinion on something. Though it would be easy at times.

Except nothing in this discussion has anything to do with Florida. Only that I happen to live there and posted. So you aren't saying anything about Florida at all then are you?
 
I'd say even in brown bottles we don't have an exact idea of what will happen to our beer once it leaves our hands. The way we pursue mixed culture fermentation is incredibly variable and while we may have some idea of the evolution of a beer, nothing is ever certain. I'm fine if you think this approach is dumb. A lot of ideas are dumb, but I don't feel it makes them any less fun to pursue.

I'm really glad folks are thinking about this, challenging the idea and expressing their opinions regardless of how strong or opposing they may be.
I can certainly see how Petit Prince could benefit from green bottle packaging. It's been one of my favorite JK regular beers. Will they still be stored the same way as brown bottles?

I may have missed it in the email or misunderstood, but to clarify, will green bottle Prince ever be for sale to go? Or has it been sold to go? I thought the email said only for tasting room, but it appears someone found some bottles to go. Not sure if those were volunteer bottles or not...

Regardless of the ridicule and naysayers, I think it's pretty cool. At least you're experimenting. If brewery/beer innovation just followed a linear formula, I think we wouldn't enjoy the wide range of options we have today.

Regarding farmhouse brewing, I see it as a subcultural entity defined by it's mindset and approach rather than it's products.

I thoroughly enjoyed reading this thread. Somehow, I had not stumbled upon it until the recent bump. All the green bottle banter made me go grab one out of the cellar :)

Oh, also somewhat on topic, "Ambivalence Avenue" is one of my favorite albums ever ElkSherpa. I really enjoy The Disintegration Loops as well. Thanks for answering our questions and sharing cool insight!
 
I don't care if JK packages their beer in off-brand zip-top plastic bags. I will drink it until it sucks; then I won't.

I find it staggering how beer nerds love to take something as completely subjective as taste and turn it into dogma. Are we really so shortsighted to think other people might enjoy stuff we don't? Come on, guise. Get a grip.

You can't drink a Blanc du Bois and then not say how it tastes. How was it?!?!
 
Is it possible to homebrew pilsners in Texas? I mean, obviously possible, but I want to bottom ferment then mature it in a cave like old times. Basically, ISO cool cave to make pilsners with
I would think you'd need a temp-regulated deep freezer.

Live Oak certainly proves you can make a good pilsner in Texas.

I'd say dig a cave, but doing that in Houston, you'd probably just make a koi pond, lol.
 
Here's a long shot. I'm planning my second ever visit to the Ardennes and Fantome in the end of April 2017. Would you happen to be visiting then? The last time myself and codasnap52 went, Dany was too busy to hang out, but we had a spectacular time with his wife.

Also, congrats on the success of Spon and its release!
