So after relaizing that garden hose QDs leak at random times, and wanting to move my brewing operation back into my kitchen (less tolerance for leaks), although electric now. I wanted to hook up my plate chiller - https://www.homebrewtalk.com/f51/plate-chiller-setup-330694/ - to have camlocks on the wort AND the water inputs / outputs on the chiller.

I was gonna do this by putting Camlock As on the water in and out and then use Camlock Bs + street elbow for the water hoses. I already have a drinking water hose, but I think the ID of the hose is gonna be too big for the any female QD coupling to 5/8" OD x 1/2" hose barb. Or am I wrong? Has anyone done this before?

I have 1/2 in camlocks on my cooling hoses. I had to use a fitting that i got at lowes or home depot. to connect the hose to the camlocks. Once they are threaded with plumbers tape they haven't leaked a bit. The fitting is just a hose to 1/2in connect and should be relatively easy to find.

looks like this i think:

I always just take my pieces in with me and dry fit them in the store. That link my not be the right piece.

best of luck

I put camlocks on EVERYTHING in my brewery so that any hose can connect to anything. I found that the camlocks don't quite seal 100% against the high water pressure in my city so it drips. It's pretty manageable during brew day, but if I forget to shut the water off, I have a nice puddle in the garage the next day.
