Looking forward to trying my all grain galaxy ale next week.. Who has brewed this before?? Does it taste as good as it smells while your brewing!! Can't wait.
 
I did an extract version of an APA with all Galaxy hops and it has been my favorite Pale Ale i've made so far. My lhbs doesnt sell galaxy hops so i'm SOL on making it again, but by far incredibly tasty
 
Sounds great and I can't wait, I have already been sniffing around the airlock hahaha... I haven't started kegs yet only because I'm new to all this but I'm really enjoying it and what a awesome hobby to have. Everyone makes you feel welcome on here it's great especially sharing ideas, general talk and some really nice recipes that I can't wait to try in the long run. Galaxy is awesome. Wonderful danky peach & passion fruit. I think you'll find it really does fun things for you when you start combining it with other awesome hops like Citra, Mosaic, Nelson, etc.

Galaxy is my favourite hop. I'm finding it goes really well with Columbus.

I've got a great Galaxy/Columbus IPA that is now my go-to keep-it-on-tap-at-all-costs beer. Was sniffing the airlock last night - mmmmmmm!
 
Nelson does really well with Columbus as well. I read somewhere that analysis has shown the two have a lot of similarities, despite their wildly different aromas and flavors.
 
Ive found galaxy to be a lot milder in flavor than many hops. It has a nice flavor, but I like a little more punch than it provides...even when using large amounts.
