Kegging is still pretty new to me and I had a few questions.

1. If you take a keg off CO2 and out of the kegerator, will it be ok? I don't think it'd spoil but wondered if there was anything to keep in mind.

2. I also assume that a cold, carbonated keg stops conditioning since the yeast are too cold. If you then take a keg out and let it warm to 70 degrees, will it start to condition again?

I guess the general question lies in that I have only room for 2 kegs and wondered if I can swap them around from time to time without hurting the beer.

For example, if I have a new IPA that I want to bottle a few from can I put it in the fridge and carb it up, bottle, then take it out and put the porter back in its place?

you can carbonate beers and take them off gas for storage, no problem. I do not recommend storing above room temp. I store them cold, but seeing that you do not have that luxury you should be fine as long as you have a good turnaround of beer. Avoid hot/cold/hot/cold.

Your beer should not have noticeable fermentation occurring in the keg if your beer attenuated well
 
Some of my posts are a little leaky. I kegged a barley wine once to let it age and free up a carboy, but the gas in post wasn't well sealed and the thing was horribly oxidized by the time I tapped it. So just watch out for that.

Not really speaking of fermentation, just wondering if they will continue to age like a bottle conditioned beer would? Does putting it on gas and then taking it off stop the beer from changing or would I have to pasteurize it for that to happen? Not sure of the science here, but logic says CO2 is CO2 regardless if it comes from a tank or from yeast.

I force carbonate for three days then store in a walk in cooler. I dont see why you could not carbonate then store at the temp you keep your bottles at, it just does not seem ideal to me
