Hey guys,
Trying to replicate a recipe that calls for passion fruit juice, unfortunately I couldn't find any juice in time that is strictly juice. Ceres is a brand that is strictly organic juice, if anyone is wondering.

Anyways, I couldn't find any detrimental info on high fructose corn syrup or corn syrup online, but wanted to double check on here. Do I need to be worried about DMS off flavors with corn syrup?

You do not need to worry about DMS or off flavors with corn syrup. High fructose corn syrup is made by enzymatically converting corn starch into (primarily) glucose (aka Dextrose), and then much of that glucose into fructose. There isn't any "corn" left to impart that DMS / cooked corn flavor. Indeed, the sugars in corn syrup are the same as those found in most fruit.

Now, whether passion fruit juice in beer will cause off flavors . . . . :)
