I just racked my 5g batch of citra IPA onto two lbs of frozen then thawed fresh mango. Anyone have any experience on how long I need to leave this in the secondary to get a bit of mango flavor and the aroma out? I also added some more citra for dry hop (going for the tropical, complimentary hops). I'm getting a small amount of new fermentation as well.

Thanks!

I was in a pinch on my last one and did 4lbs of blackberries on a hefe for about 5 days and it turned out pretty good. I'm guessing mango doesn't impart as much flavor as blackberries though. I'd give it at least a week. Maybe try pulling a sample after that point and try it out. I've heard to leave it on the fruit just a little past the amount of flavor you want, as it will tend to fade pretty quickly.

I did 5 days of fresh apricot purée in my pale ale. That was pretty much a good length of time for my beer, and that was with a Belgian yeast strain.

when using fruit i tend to leave it until its lost most or all its color to the beer, just check on it often.
