Fruit in Secondary - gravity question

I recently brewed a Kolsch. Starting gravity was 1.050, finish gravity was 1.010 (both as expected). I used a bottling bucket for primary fermentation.

I racked off around 1 gallon using the spigot (to insure I got some yeast) onto two pounds of sliced, frozen then thawed strawberries into a 2 gallon jug. I took a gravity reading and got 1.014 so, obviously, I added in 4 more points worth of sugar.

My question is, should I expect to get back to 1.010?

It is a pain to draw off samples from this small jug so I am hoping to not have to do it too often.

My main concern is creating bottle bombs or gushers.
