Friend would like a Citrus IPA... how's this?

I looked a few different recipes and decided to try to come up with my own. I'm going to stick to extra for ease of brewing because well, I just kegged 10 gals of undrinkable beer so.


Batch: 5gal

Malts:

Base: Pale LME - 8Lbs
Specialty 1: Carapils (DE) - 1Lb Steeped at 150ish for 30 min
Specialty 2: Crystal 40 - 1Lb steeped at 150ish for 30 min

Boil: 60 mins - 4- 4.5ish gal

Hops:
Centennial - 1oz @ 60
Centennial - 1oz @ 30
Centennial - 1oz @15
Citra - 1.5oz @ flame out
Citra - 1.5oz Dry hop 7 days before kegging.

Brewtoad says:

OG: 1.064
FG: 1.009
IBU: 70
ABV: 7%
SRM: 9


Thoughts? Overdoing it on the citrus flavor? From what I've seen it can be hard to ellicit?
 
Personally, I’d cut the 60 min hop to .5 or .75 and add orange zest to last 5 min of boil.

You can use a potato peeler and peel the orange , trying to avoid as much white pith as possible. Much easier than using a zester. Also less mess in your fermentor.
 
If it were me, I'd cut the crystal in half. I might also drop the 30 min addition.

Kinda wanted to keep the IBUs around 60-70ish. Only cutting the 30min addition brought it down to like 52 so I upped the 60min addition to 1.5oz
 
Mosaic will get you more citrus flavor than Citra. I have a pound of citra I've been using up, it actually does not seem that citrus flavored to me, despite the name. Decent hops though..
 
What about using Azacca in place of the citra?
 
+1 on the Mosaic. Comet, Apollo, & Amarillo will also get you there. If you don't feel like zesting your own oranges, your local brew place should have dehydrated sweet orange peel without and albedo.

Would you take Mosaic over the Azacca?
 
It's a tough one. If I had both I think it just boils down to personal preference to the flavor they're going for. Here are a couple descriptions I pulled and fully agree with both of them.

Mosaic: Specific aroma descriptors include blueberry, tangerine, papaya, rose, blossoms, and bubble gum.

Azacca: Specific aroma descriptors include tropical fruits and citrus.

So I guess you can say Mosaic would be fruitier/sweeter. Great for a bitter IPA. Whereas Azacca would still be fruity, but not as sweet. In your case with the citrus IPA I think I would go Mosaic. Especially if you're going for a higher IBU.
 
Hmmm, maybe I'll lower the 60 min addition back to 1 oz and use the azacca in that case! Azacca seems to be more exclusive to citrusy
 
Using brewer's friend. This is the final recipe using ingredients I can find. Changed the 15min addition to 30min for a little extra bitterness.
Malts:

Base: Gold LME - 9Lbs
Specialty 1: Carapils (DE) - 1Lb Steeped at 150ish for 30 min
Specialty 2: Crystal 40 - 0.5Lb steeped at 150ish for 30 min

Boil: 60 mins - 4.5ish gal

Hops:
Centennial - 1.0oz @ 60
Centennial - 1oz @30
Orange zest - 2oz @5
Azacca - 1.5oz @ flame out
Azacca - 1.5oz Dry hop 7 days before kegging.

S-05 Yeast

Brewer's friend says:

OG: 1.060
FG: 1.011
IBU: 58
ABV: 6.33%
SRM: 7.61
 
I never used Azacca, but I'd say grapefruit is the predominant citrus taste I get from Mosaic.

You might actually enjoy the flavor more if you drop down the IBUs a bit. My opinion only, and I'm a bit hopped out, heading toward malt again.
 
The IBUs should be right on par with the usual IPAs we drink. But I guess we'll see. I'll let you know how it turns out.
