Head Brewer at Free State gave me the following recipe in grain %'s & hop schedule/ IBU contribution... Just brewed it and will post a side-by side & blind taste test..

60% American 2Row
17% Weyerman CaraHell
11% Weyerman Munich II
5% American Wheat Malt
4% Dextrose
3% Acidulated
1% Black Patent

OG 14.75ºP/1.060 SG

Columbus (pre-lauter) 32 IBUs
Crystal (15 min to kettle-off) 9 IBUs
Centennial (kettle-off) 22 IBUs
Galaxy/Centennial Dry hop (3:1 Ratio)

This beer is Fantastic!!! Spot On with the Winterfest Seasonal (After all... It was the recipe.. but I didnt mess it up!!)
Unfortunately, I did not have any Free State Winterfest to conduct blind taste test. The Galaxy hop aroma effortlessly melts in with Centennial on the palate... very NICE... Note .. I think Citra could be effectively used here as well.

This was my first experience 'Whirlpooling' hops, which for the homebrewer is really a fancy term for stirring in hops at flameout, and setting the timer. Some folks have reservations about doing this as they think it affects the cold break, but I found that by keeping the temperature just under boil (190's) by having flame barely on mitigates this. In brewsmith the flameout setting calcs IBU's at this temp range.
Anyways I'm brewing this one again, and coming up with a spring summer variant (with Citra & lemon peel minus carahell & black patent).
