obviously, not enough, but here's a breakdown of my lessons learned from weeks 1-3.

number 1.
cook with enough heat. you have to hit a hot-break, but not necessarily roll a crazy fast wicked boil to accomplish the goal. boil is boil, and equipment is equipment. you work with what you have to work with and accomplish certain goals and learn from mistakes, that's it.

number 2.
take your first great batch and build upon it. if it ain't broke don't fix it, but tweeking-it is just fun. cloning-it will be even better.

number 3.
ignore all your fears, jump into all grain brewing, accept the inevitability of failure, and jump-in headfirst and strong.

number 4.
secondary fermenting, especially for beginners, IS secondary. are you looking for clarity? - you'd be amazed at the clarity you can achieve through 1 fermenter. and unless you're going high gravity - you may be able to accomplish your goals quite simply. time may accomplish many of the same goals and flavors.

number 5.
give it away. beer isn't good for you. it tastes fantastic, but it'll kill ya. so share your bounty and live to live another day. every bottled shared is a bottle appreciated and not ignored. moderation and sharing plays a key role in brewing AND drinking.

number 6.
everything happens for a reason.
