I've made some dessert wines and want to fortify them with some brandy. Should I be adding the brandy to the carboy just before bottling or should I be adding it and letting it sit for some time? I'm not a brandy drinker, is one 750 ml bottle enough for a 2.5 gallon batch of dessert wine? Any flavoured brandy is okay?
 
I don't think it will matter when you add the brandy, as long as you make sure it's mixed throughout.
