I have a batch of beer ready to keg but I don't have a fridge/freezer ready to hold it yet. Can I keg it and start to force carb at room temp and then later cool it down to serving temp? Room temp is about 68F.

Sure. You'll probably want about 30 psi on the regulator at 68 degrees, but check a force carbonation chart to make sure.
