Hey guys,
I'm relatively new to home brewing (coming up on a year soon) and I'm an extract brewer that steeps specialty grains before my boil. This is the first time I'm posting a recipe on here--and I'm a little reluctant for fear of someone stealing my awesome recipe! I don't have any experience using Warrior or Citra hops and I would like some feedback. I chose them because I got a little creative and liked their descriptions.
Anyways, I wanted a beer that had a clean, crisp bitterness, a citrus-sweet flavor and a huge floral/citrus aroma. I also want a light body with high alcohol content for ease of drinking/getting wild. Here's the recipe:
Note: All alphas are assumed and timing will be changed to hit an IBU value of 70.
5 gallon batch.
Pre-boil water volume: 2.5 gallons.
Steep for 30 ~ 45 minutes @ 165 degrees
8 oz Crystal Malt
8 oz Honey Malt
8 oz Maris Otter
Begin boiling
1 lb Candi Sugar, clear @ 60 minutes
1 lb Table sugar (sucrose) @ 60 minutes
1 oz Warrior [15% alpha] @ 60 minutes
4 lb Extra Light Dry Extract @ 55 minutes
1 oz Citra [12% alpha] @ 30 minutes
1 oz Citra [12% alpha] @ 20 minutes
1 Whirlfloc @ 15 minutes
1 oz Citra [12% alpha] @ 10 minutes
1 oz Amarillo Gold [8.5% alpha]@ 7 minutes
0.75 oz Sweet Orange Peel @ 5 minutes
Yeast -- Wyeast American Ale II.
I'm going to be fermenting at a ridiculously hot temperature around (78 the hottest, 73 the lowest), so I chose a yeast that gives off fruity flavors at these temperatures. I've used this yeast at these temperatures before with an IPA and had pretty delicious results.
--Rack to secondary @ 14 days. --
4 oz Amarillo Gold for 21 days.
Est. original gravity: 1.059
Est. final gravity: 1.007
75.7 IBU (Will be adjusted to 70)
5.0 SRM
6.9% ABV
