Flavoring in Secondary

I just put my 2x choc. stout into the secondary carboy last night. At this point, would I be able to add some kind of flavoring or aroma, such as a pot of coffee, or some more chocolate?

now, make sure whatever you add you take the proper preparation for the product

Like what? sanitation? or accounting for time in the secondary on whatever I add?

I was thinking of either adding more unsweetened cocoa powder, or 8oz of lactose, but I heard of people dumping a pot of coffee into their secondary,
Are any of these things a good or bad idea?
