I've had my sour sitting in secondary for 7 months, it has developed a nice Pellicle and I was trying to get an idea on how long some of you have let your sours sit, before bottling. I'm thinking a minimum of a year, maybe even 18 months.

The oldest batch in my gueuze project is from February of 2012 and will sit for another year or so.

For most other sour beers, the simple answer is that I package them when they taste "right" in terms of acidity, funk (if applicable), and complexity. Tasting your sours throughout the process is a great idea.
