I have 3 one gallon batches going that I have moved to secondary after almost 3 weeks in primary. There is not a bit of sugar left In it and I am wanting to sweeten to taste and carbonate for a couple days and than heat pasteurize per the sticky in this forum. Using frozen cans of concentrate to sweeten, do you think I will have any issues bottling and leaving for 3-4 days and than heat pasteurize it? I'm. Not wanting to open a bottle every day, and I'm not looking to carbonate a ton, just looking for a tiny bit of sparkle and to sweeten it good. I just don't want exploding bottles. Think I will be 100% safe for 4 days of carbonating before I kill the yeast?
 
not sure i understand what your trying to do.. are you going to pasteurize in capped bottles?
 
Get a plastic screw top bottle, like a soda bottle, fill it when you bottle and squeeze it a bit when capping it and feel that for firmness and you won't need to open bottles to test. When it gets as firm as the original bottle you can check the soda bottle for carbonation.

I believe so. I'd like to add sugar to sweeten and bottle it, then leave for 3-4 days. And the pasteurize. I am not particular about how much carbonation, just not much. Really just a touch of sparkle. Will 3 days suffice and not be to much?
