Even if you just pour the bottle of kombucha into a jar and let it sit out (covered) at room temp for a few days, it will grow a scoby layer. the important part is starting with strong starter tea, so even a pint bottle (maybe add another table spoon of sugar) can be left out to ferment more and used as a starter for a gallon. I left my gallon sit a too long between making new batches, and it formed into its own scoby hotel
