Made my first mead tonight. Took the easy way out and made a JAOM. Went together easy and started bubbling about half an hour later. I've only got about four beer brews under my belt but saw this recipe and wanted to give it a shot. Hope to learn more about mead as well as beer.
 
have patience & I bet you will love the results. started my jaom about a year ago & just bottled 2-3 weeks ago.
 
JAOM is a great way to get started in mead. Every batch I have done is crystal clear and the fruit falls to the bottom in less than 70 days and is bottled in 75 days. My advice, keep a couple bottles for drinking whenever and keep a couple that you will not touch at all for six months after bottling. Mead improves over time.

Another important thing is that your baker's yeast cake sitting at the bottom is VERY flaky and easily disturbed. Move your JAOM to where you are going to bottle it and let everything settle for 48 hours.
 
Yup. In 65-70 days the fruit will fall. Carefully rack to a clean vessel trying not to disturb the lees as nyquil said. Bottle it a week later just to be sure you didn't suck up any sediment. A gallon batch will yield about 4 wine bottles. It gets better with age, but I haven't been able to get past 3 months - the stuff is awesome.

Hmm... I need to make more.
