So I was at the end of a 75 min. mash of my dry stout when I went down to my cellar and realized I didnt put the flaked barley into the mash. I quickly added them in added a bit more hot water thinking I would wait another 30 mins. Then I realized all of the enzymes are probably deactivated. So I added 2 tsp. of amylase enzyme, hoping it works.

What do you think? Will the flaked oats convert? If so how long??

First of all, unless you were mashing at 157* or higher all your enzymes weren't denatured, so next time feel free to let your mash go a bit longer. A pound or two of flaked barley should convert in about 15 minutes, max.

LOL. I Did the same exact thing a few batches back, but I had just mashed out at 168. I added it anyway and waited 40 mins.
While it may not have come out EXACTLY as intended, the beer tastes great.
