I just bottled my first mead this morning. It was a 1 gallon traditional batch. I started it back in early February with an OG of 1.086. Racked to secondary after 10 days with a gravity of 1.002. Racked to tertiary after 2 months, no gravity reading then. Today, at bottle time I had a FG of .996.
Taste wise the last 5-6 months took out most of the harsh bite. It is almost a smooth very dry wine now. Hoping another 2 months in the bottles rounds it out even better.
