I just racked a Belgian White to my first keg... It was in primary for 10 days, I transferred to a carboy to make space.. and it was in there for 5 days... now, I needed even more space so I racked it to the keg.

My question... I think this beer needs another 3 weeks of conditioning before it is good to go. Should I leave it in my ferment room (70 deg) or, should I go ahead and refrigerate with 10 psi? Note: I put a 30 psi shot on top of it already to seal the lid but have disconnected the bottle.

Thanks in advance for your thoughts!

PS: If it isn't obvious, I am trying to fill a fast flowing pipeline.

Leave it at 70. It will condition much faster at that temp than at refrigerator temps. As long as it's sealed up there shouldn't be any problem.

Thanks! That's what I thought so that's where I put it... but, I didn't want to waste time if it wasn't necessary. Thanks again!

...and if you're not using the co2 for anything else you could leave it connected at about 30psi (at 70 degrees) so the beer is carbed up when you're ready to put it in the fridge and drink.
