I've been making the transition to gluten free for health reasons. I made a GF coffee chocolate stout that was decent, but needed a hop fix. I came up with this recipe to use some of the mosaic hops I have. I just kegged and carbed it this week. Tried it tonight and was very happy with it. Next time I may up the IBU's. Very fruity and just enough body.
Millet is from Grouse.
8 oz malted millet
5 oz light crystal millet
4 oz medium crystal millet
8 oz flaked rice
2.25 lbs sorghum syrup (15 min)
1.33 brown rice syrup
8 oz honey
2 oz maltodextrin
2 oz medium candi syrup (110L)

.3 oz Columbus 60
.10 oz Columbus 15
.5 oz mosaic 15
1 oz mosaic 0
.5 citra 0
.5 mosaic dry hop
.5 citra dry hop

Nice! Looks like a good recipe! Aggressive flavoring and aroma hop additions.

Did you test the gravity or go by the program calcs? Looks like they may be giving a little more gravity contribution from the steeped grain then I would expect, but I have not used flaked rice. My steeped millet and buckwheat ended up giving about 8 or 9 gravity points if I remember correctly.
 
I adjust the recipe to show actual gravity. I use both a refractometer and hydrometer. I did a long steep and amylase enzyme.

Forgot to correct my FG, it was actually 1011.
Next time I may try a Bells Two hearted version of this with all Centennial.

I brought this to my local homebrew club meeting along with my gf oatmeal chocolate stout and both were a hit. No one believed me it was gluten free.

Just what I was looking for! My wife's best friend is gluten free and I made her a pale ale and her favorite part was the hops so I'm going to try this soon!
 
I decided to brew this again since my keg was getting low. Only change I'm going to make is up it to 5 gallons so it will last longer. Hop flavor and aroma is still awesome.
