I just racked my cider into secondary yesterday after a month in primary. The gravity looked real good at a little less than 1.000. I forgot to take an initial gravity reading before fermentation started though. I tasted the sample and it was really dry so I added a can of concentrate. I'll leave it in secondary for a couple months or so and than bottle. I don't know if I'll carbonate or not.

My recipe was
3 1/2 gallon bottles of Motts Natural fresh pressed 100% apple juice
2 1/2 gallon bottles of Motts 100% apple juice
1 # light brown sugar
4 oz lactose
1 packet Nottingham brewers yeast

I hope it turns out well!

That makes perfect sense david, and I would expect to have some bubbling in my airlock, but I haven't noticed anything. Should I just wait until I bottle and sweeten at that point with more concentrate or lactose?
