I just started my first brew, an Irish amber ale. I got the kit from DelFalcos.com. Wish me luck. I know that everyone post this kinda stuff, but I'm stoked. I'll keep everyone posted on any news, good or bad. RIGHT ON....
 
When is the ideal time to rack into the secondary fermenter? I'm getting mixed answers on the subject.
 
From what I understand, a good rule of thumb is 1-2-3.
One week in primary
Two weeks in secondary
Three weeks in bottles.

But that could vary depending on what kind of beer you are making.
 
Defalco' s thats my local homebrew store. They are four blocks from my house.
If its your first beer, i dont know how you can wait for a primary, secondary, and then bottle.

I could not wait. I bottled my first one in a week. It was a mexican cerveza, and turned out great. The two weeks in the bottle part can not be shortened, the beer was good after one week, at two weeks it is fantastic.

I started three weeks ago, brewed three extract batches and did my first all grain yesterday. I got enough beer saved now that i can take more time with the process.

It's a St. Arnolds Amber clone.
